Its the 9 days this week – a period of mourning in the Jewish Calendar when we don’t do a number of things, including drinking wine and eating meat. For someone like me, who doesn’t like fish, this can be a really tricky time to eat wholesome and filling meals.
People often turn to pasta and pizza for the week, but many such dishes are very high in calories, full of heavy cream and similar products. While I love a good penne a la vodka or fettuccini alfredo, I find them low in nutritional value and not super filling. I decided to challenge myself to create a pasta dish that had more protein, more nutrition overall, and was still cheesy and delicious!
My solution? These Cheesy Avocado Lasagna Roll Ups! They get protein from the cottage cheese, nutrients (and yummy flavor!) from the avocado, all in a delicious and easy to serve pasta dish that you will absolutely love!

Can I skip the avocado in this recipe?
While the avocado is the significant flavor in this pasta dish, you can skip it for a more traditional cheesy lasagna roll up.
Can I use other cheese besides for mozzarella?
Sure! feel free to use your cheese of choice with this dish, or a combination of cheeses.
Can I made a regular lasagna with this recipe instead of the lasagna roll ups?
Absolutely! Instead of rolling up the lasagna noodles as directed, you can lay down a layer of lasagna noodles over the bottom of the pan. Top that with a layer of cheesy avocado filling, followed by another layer of lasagna noodles, etc, until you used up the noodles and filling. You may need to adjust the baking time as needed for this version.
Can I add tomato sauce on top of the pasta?
I choose not to use tomato sauce in this recipe, as it would overwhelm the flavor of the avocado. However, you can definitely use a layer of tomato or marinara sauce if you choose!
Another option is to place a layer of guacamole or mashed avocado on top of the noodles, before adding the cheese.
Can I use raw lasagna noodles in this recipe?
Obviously, you can’t make roll ups with raw lasagna noodles, but you can use my instructions above, to make a traditional lasagna, using no-boil lasagna noodles. Follow package instructions for adding additional liquid to soften the noodles.
Can I make these Cheesy Avocado Lasagna Roll Ups ahead of time? Can I freeze them?
Yes you can! My recommendation would be to prepare this dish through the first (covered) baking portion. Refrigerate or freeze until ready to serve. Just before serving, add cheese and follow instructions for the second bake. The lasagna roll ups may require more time than indicated in the recipe if they are cold or paritialy frozen when they go into the oven.
Can I make this with any other type of pasta?
Sure! The filling will lend itself really well to stuffed shells or manicotti, following the instructions written below, but stuffing the pasta instead of using a lasagna noodle and rolling it up.
You can also mix the filling together with cooked penne or ziti for a baked ziti-like dish.
Can I add any other veggies to this dish to bulk it up?
You sure can! Saute your choice of vegetables and add it to the filling. Some great options are onion, mushroom, spinach, and peppers.

Cheesy Avocado Lasagna Roll Ups
Ingredients
Cheese Avocado Filling:
- 2 ripe avocados, mashed
- 1 container (16 oz) small curd cottage cheese (low fat okay)
- 1 egg
- 1 teaspoon kosher salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 2 Tablespoon olive oil, preferable garlic infused oil from @liebersfoods
- 1 cup shredded mozzarella cheese
Assembly:
- 10-12 lasagna noodles
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 350. Grease a 9x13 baking dish and set aside.
- In a medium bowl, combine mashed avocado, cottage cheese, egg, salt, basil, oregano, pepper, olive oil and 1 cup shredded mozzarella cheese until combined.
- Lay a cooked lasagna noodle on a flat surface. Spread a generous layer of avocado filling over the noodle. Roll up, then place in prepared baking pan. Repeat with remaining noodles and filling.
- Cover pan tightly and bake for 20 minutes.
- Remove pan and Increase oven temperature to 400.
- Uncover noodles, sprinkle with about a cup and a half of additional mozzarella cheese.
- Return to oven and bake for another 20-30 minutes, until the cheese is starting to get colored and is bubbling. Serve immediately.
Notes
Plan ahead: you can prepare the cheese avocado lasagna roll ups and refrigerate or freeze after baking covered. Just before serving, add cheese and do the second (uncovered) bake.
