Perfect Homemade Apple Pie
Ingredients
- Crust:
- 2 cups flour
- 2 Tablespoons sugar
- 1/2 teaspoon sea salt
- 2 sticks frozen butter or margarine
- 5-6 Tablespoons ice water
- Filling:
- 6 Granny Smith apples, peeled and sliced
- Juice of 1/2 lemon
- 1/2 cup brown sugar
- 1/3 cup granulated sugar
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon ground ginger
- Pinch cloves
- 3 Tablespoons cornstarch
Instructions
Prepare the crust: Combine flour, sugar and salt in the bowl of a food processor. Add cubed margarine and pulse in quick bursts to form uneven sized pieces.
Sprinkle ice water over the top; pulse in on-off bursts until the dough is JUST starting to come together. Set aside to chill for a few hours - do NOT overwork the dough.
Prepare the filling: combine apples and lemon juice in a large bowl. Add sugar, brown sugar, cinnamon, ginger and cloves. Stir to combine. Let sit while you roll out the dough.
Roll out chilled dough on a lightly floured surface. Place dough in pie pan. (No need to grease the pan first.) Stir cornstarch into apple mixture until dissolved. Place apple slices into lined pie pan. Pour liquid that drains off over the apples.
OPTIONAL BONUS: boil liquid from filling in a small pot over high heat for about a minute, until thickened. Toss with apples.
Place another rolled out crust over apples and cut slits, or roll out and form lattice, if desired. Bake at 375 for about 45 minutes.
Notes
This pie freezes nicely, well wrapped.
