Gnocchi with Spinach and Leeks
Ingredients
- 2 Tablespoons olive oil
- 1 Spanish onion, diced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 6 cloves garlic, minced
- 2 leeks, white parts only, sliced in half rings
- 1 (24 oz) bag frozen spinach, defrosted and squeezed dry
- 1- 2 packages (16 Oz) gnocchi, cooked according to package directions
- Zest of one lemon (optional)
- Juice of one lemon
- 1/2 cup chopped fresh parsley
Instructions
- Heat oil in a large, deep frying pan over medium heat. Add onion, salt and pepper; cook for about 5 minutes, stirring occasionally, until softened.
- Add garlic and leeks. Reduce heat to medium-low and continue to cook for 8-10 minutes, until mixture is reduced and softened. Add spinach and cook for an additional 10-15 minutes.
- Increase heat to high and add gnocchi. Cook, stirring occasionally, for about 5 minutes, until the gnocchi start to get some color.
- Remove from heat and stir in remaining ingredients.
Notes
Plan ahead: while best fresh, these gnocchi can be prepared 1-2 days ahead of time and rewarmed covered, until heated through.
