In honor of my upcoming FIFTH cookbook, Real Life Shabbos Cooking, I decided to go back and share some fan favorites from my first four cookbooks to give you a taste of my style that you can expect from Real Life Shabbos Cooking. Starting off strong with one of the best cake recipes I’ve ever made, the impossibly perfect Pumpkin Crumb Cake from my first cookbook, Something Sweet! This cake is incredibly moist, perfectly spiced, and has an obscene amount of crumbs, as a good crumb cake should. This cozy fall cake is going to be the surprise hit of your sukkos menu!

Pumpkin Crumb Cake
Ingredients
crumbs:
- ½ cup sugar
- 1 cup brown sugar
- 4 teaspoons cinnamon
- pinch salt
- 2 ½ cups flour
- 1 cup oil
cake:
- 1 cup oil
- 1 cup sugar
- ½ cup brown sugar
- 2 eggs
- 1 cup pumpkin puree
- 1 ½ teaspoons vanilla extract
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 ½ cups flour
Instructions
- Preheat oven to 350. Grease and flour a 9x13 inch pan and set aside.
- Prepare the crumbs: Combine the sugar, brown sugar, cinnamon, salt and flour in a small bowl. Add the oil and mix until combined and crumbs form. Set aside.
- Prepare the batter: In the bowl of an electric mixer on medium speed, beat together the oil, sugar and brown sugar. Beat until smooth.
- Add the eggs, pumpkin puree, vanilla extract, cinnamon, baking powder, baking soda and salt. Beat until combined.
- Add the flour, gradually, and beat until just combined. Do not overmix.
- Pour the batter into the prepared pan. Place the crumbs over the entire surface of the cake (there will be a very thick layer of crumbs).
- Bake for about an hour, until a toothpick inserted into the center comes out clean.
Notes
Plan Ahead: This cake freezes nicely in an airtight container. For best results, freeze whole and cut into squares just before serving.
