Tiny Pecan Pies and a Pie Crust Tutorial

Until a couple of months ago I was absolutely terrified of making my own pie crust. Any and all desserts that involved pie crust started with one out of the freezer aisle in the grocery store. Then one of my coworkers asked if he could order a pie as a treat for his family for Rosh Hashanah. My first instinct was to say no, after all, I had never made a pie crust, and didn't want to try it for the first time on a customers. Note: the pictures on this post don't do the dessert justice- at all! Please trust me on this one- this recipe is delicious, easy to make and even impressive. I've mentioned before that I occasionally get cooking or baking ideas into my head and can't get them out- until I find out how good they might be. Yesterday's Eureka moment came while I was at work. Sweet Lemon Lukshen (Noodle) Kugel

I'm sitting here trying to figure out how to describe a kugel to my non-Jewish readers. I know I am not the only one. I guess Kugel is one of those quintessential  Jewish foods that have slowly seeped into the non-Jewish culinary world, but not nearly enough. A kugel is generally a side dish of sorts. It can be sweet or savory, and served with almost any meal. In some observant Jewish houses, (such as mine!) it doesn't feel like Shabbos (Sabbath) without potato kugel (a casserole of sorts, featuring finely ground potatoes). Two Colored Squash with Shallots and Herbs

So it turns out this Overtime Cook idea is harder than it sounds. Does it sound hard? It's harder. I get home at about 7:30 pm on a good night. By the time I cook and eat supper and start my baking, it's late. I finish at a ridiculous hour, then try to photograph my food, clean up, shower and get a few minutes of sleep before I wake up at 6:30 the next morning for another round of this. Whew. S’mores Brownie Bites

A couple of weeks ago, an idea popped into my head. S'mores. In a brownie. Yum. Yeah, I can be simple that way. My idea was simple: keep the original format of the smore, but swap out the chocolate for some rick gooey brownies. So I googled it and googled it, but I couldn't find anything like that. Sure, folks made smores brownies, but they usually entailed a mix of graham crackers and marshmallow on top of a brownie. That isn't what I am looking for. So I made my own version. Healthy Quiche Cups

Here's a secret: until a couple of days ago, I'd never tasted a quiche. As I've previously mentioned, I'm a perpetual dieter. As such, the typical fattening quiche baked in an even-more fattening crust has always been off limits to me. Until recently, when I was bored of everything I usually made, and decided to get creative. "I'll make a low fat quiche," I told myself. "And who needs a crust anyway?" Erm, me? But I was hungry.
