When I asked my Instagram followers what kind of recipes they were looking for at the moment, the majority of the responses were some version of the following:
- easy dinners
- all in one dinners
- crockpot meals
- easy chicken recipes
Well, I thought to myself that I can share a recipe that checks all of these boxes, and then some. Growing up, my mother always used to say that you can’t please all of the people all of the time, but hey, I think this recipe comes pretty close!
This Maple Dijon Crockpot Chicken Dinner involves just one dish – the crockpot itself. It’s quick and easy to assemble, has the sides built into it, and is super kid friendly! A real winner, all around. Try it – you’ll thank me later.
What is the texture of the chicken in this recipe?
This recipe makes chicken that is super soft, perfect for those who like a softer chicken, as opposed to a roasted chicken texture.
Can I make this in the oven instead of a crockpot?
Yes, you can. Place everything in a 9×13 baking dish (feel free to use disposable here!), cover, and bake at 325 until cooked through and soft. It will likely take about 3 hours to cook, but check and see!
Can I use different vegetables instead of the ones listed?
Yes you absolutely can! I chose to use root vegetables, because they hold up well in long cooking times, as with this recipe, but you can definitely choose other vegetables. The key here is to use veggies that will also hold up well to longer cook times – any root vegetable should work well here.
I don’t have potatoes – can I use something else instead?
If you don’t want to use the potatoes in this recipe, you can simply omit them and make a simple side dish to serve alongside this, such as rice or pasta.
Can I freeze this Maple Dijon Crockpot Chicken Dinner?
I don’t recommend freezing this dish. The chicken itself might freeze okay, but the vegetables and potatoes won’t freeze well. You can make it a day or two ahead of time and rewarm it, if you’d like.
How can I prepare this ahead of time?
While this dinner can be made a day or two ahead of time and rewarmed, the best way to make this ahead of time would be to prepare everything in the crockpot liner ahead of time (the night before, for example), and then to place the liner in the fridge. The next morning, all you need to do is plug in the crockpot, add the liner with dinner in it, and you’re good to go!
Can I use a whole chicken instead of a cut up chicken?
Yes you sure can! There’s no need to make any changes to the recipe if doing this. If you like, you can stuff the cavity of the chicken with a cut up lemon or cut up onion, which help flavor the chicken from the inside. This is totally optional and not necessary.
Can I use chicken cutlets instead of bone-in chicken?
I don’t really recommend this, for two reasons. Firstly, the chicken bones and skin will help flavor the dish. But more importantly, chicken cutlets tend to dry out much faster with longer cook times like this recipe calls for. If you must use cutlets, please use dark chicken (also called pargiyot or baby chicken) instead of white meat (chicken breasts) which really don’t do well cooking for so long!
Can I use anything instead of the maple syrup?
Sure! You can replace the maple syrup with honey, which has a different, but very delicious flavor that works really well in this dish.
For this recipe, but in general as well, I strongly recommend AGAINST using pancake syrup, which is just artificially flavored corn syrup.
Can I make this in the crockpot for Shabbos lunch?
I don’t suggest it, as chicken does not do so well cooking for that long. If you want to make this for shabbos lunch, my suggestion is to use a cut of meat that works low and slow (second cut brisket, kolichel and chuck roast are some examples) in place of the chicken. The flavors will work well, but the chicken is the issue here.
Can I use this sauce for anything else?
Absolutely! This sauce will make a great marinade for grilled chicken. Marinate chicken with about half of the sauce, and use the rest as seasoning for roasted or grilled vegetables.
Can I use a different type of mustard instead of Dijon?
Sure! I’m not super into plain ol’ yellow mustard, but it will work. Some options I would prefer are spicy brown mustard, deli mustard, or stone ground mustard.

Maple Dijon Crockpot Chicken Dinner

Ingredients
Sauce:
- 1/4 cup olive oil
- 1/4 cup maple
- 1/4 cup dijon mustard
- 2 Tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon soy sauce
Assembly:
- 1 small butternut squash, cubed
- 2 medium carrots, cubed
- 4 shallots, peeled and halved
- 15-20 baby potatoes, halved
- 1 chicken, cut into 4 or 8 pieces
Instructions
1. Prepare sauce: place all ingredients in a small bowl. Mix to combine.
2. Place vegetables and potatoes in the bottom of the crockpot. Add 1/4 sauce and stir to combine.
3. Place chicken over the vegetables. Pour the remaining sauce over the chicken.
4. Cook on high for about 4 hours, or at a lower setting for 6-8, until very tender.

Plan ahead:
This dish is best enjoyed fresh. You can prepare everything in the crockpot liner the night before, then just plug it in the next morning.
