Waffles are one of my top 3 foods (along with dumplings and popcorn) and if you’ve only been enjoying waffles in a sweet format, you’re missing on some of the best food you could be eating. Chicken and waffles is a famous southern dish, but my version swaps the fried chicken for maple pulled chicken (lighter and easier to prepare), swaps the big sweet waffles for mini cornbread waffles (prettier presentation!) and tops it with just the right toppings for tanginess and crunch!
If you’re looking for a dish that will impress everyone but is actually really easy to make, this is the recipe for you.

Maple Pulled Chicken with Cornbread Waffles
Ingredients
Maple Pulled Chicken:
- 2 lb dark chicken cutlets
- 1 onion sliced
- 1 teaspoon kosher salt
- 1/2 cup bbq sauce
- 1/4 cup maple syrup
- 2 Tablespoon apple cider vinegar
Cornbread Waffles
- 1 1/4 cup flour
- 1 1/4 cup cornmeal
- 1/4 cup honey or maple syrup
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon chili powder, optional
- 3 eggs
- 1/2 cup oil
- 1 1/2 cups non dairy milk
Assembly:
- balsamic glaze
- pickled onions, optional OR french's onions, optional
- chopped parsley, optional
Instructions
- Prepare the chicken: Preheat oven to 350. Place all chicken ingredients in a 9x13 baking dish; mix to combine. Cover tightly and bake for 75 minutes. Set aside until cool enough to handle. Shred chicken into small pieces using two forks or your hands. Set aside.
- Meanwhile, make wafffles: Combine all dry ingredients in a mixing bowl. Add remaining ingredients and whisk to form a smooth batter.
- Pour waffle batter into waffle machine and cook according to machine instructions.
- To assemble: Place waffles on a serving tray. Place warm chicken on top of waffles. Top each waffle with a drizzle of balsamic glaze and pickled onions and herbs, if using.
Notes
Plan Ahead: Waffles can be prepared ahead of time and frozen in an airtight container or bag. Chicken can also be prepareds ahead and frozen in an airtight container. For best results, assemble fresh. Rewarm chicken tightly covered and waffles loosely covered.
