My favorite kind of shabbos lunch appetizer to serve is a log of something that I can put on a board and serve with a knife – so everyone can cut the size slice of their choosing. IN addition to the classic deli roll, I love to serve this meat boureka – family style – so everyone can cut their own slice. It looks beautiful and tastes amazing – what’s not to love?
Family Style Beef Boureka
Ingredients
Filling:
- 1 Tablespoon oil
- 1 onion, diced
- 1 teaspoon kosher salt
- 3 cloves garlic, minced
- 1 lb ground beef
- 2 Tablespoons tomato paste
- 1 Tablespoon dried parsley
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon sumac (optional, but recommended)
Assembly:
- 1 large puff pastry sheet
- 1 egg, lightly beaten
- Sesame seeds, optional, for topping
Instructions
- Preheat oven to 375. Line a baking sheet with parchment paper; set aside.
- Prepare filling: Heat oil in a large, deep frying pan over medium heat. Add onion and salt. Cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook for another 2-3 minutes.
- Add meat to pan and cook while stirring to break it up into small pieces. Add tomato paste and spices. Cook for an additional 5-8 minutes, until meat is browned.
- Assemble Boureka: Place puff pastry sheet on prepared baking sheet. Spread filling over the pastry, leaving about an inch uncovered on the sides. Roll the pastry up, cinnamon roll style, ending with the seam on the bottom.
- Cut slits in the pastry for air to escape. Brush with beaten egg and top with sesame seeds, if using. Bake for about 35 minutes, until golden brown.
Notes
Plan ahead: boureka can be prepared ahead and frozen until ready to serve. Rewarm, loosely covered or uncovered, until heated through.
