Coffee Cake Cream Cheese Cookies

You might have noticed, if you're a steady reader, that I kinda like to use cream cheese in my recipes. Whether it's a great new cheesecake recipe, this delicious bundt cake,  these brown butter cookies, or perhaps my ever popular Cappuccino cookies, or even one of these delicious frostings, cream cheese just makes yummy things even yummier. Pumpkin Butterscotch Cookies

I wish I had a great story to share with you about these cookies, but sadly, I don't. It was a minute of inspiration, caused by the can of pumpkin sitting on my pantry shelf. I wanted to make pumpkin cookies, but most of the recipes I found were more to the cakey side. I wanted cookies with a chocolate chip cookie type texture, and struck gold with this recipe. Then, I couldn't help throwing in some butterscotch chips, y'know, for some more awesomeness. The pumpkin flavor of these cookies is subtle, but it's definitely there. A trendy cookie like speculoos or biscoff combines perfectly with a traditional treat like biscotti. Intrigued? Read on! These dense and crunchy Oatmeal Peanut Butter M&M Cookies are a party in your mouth! Read on... I can't even tell you how many times I intended to post this recipe. I made it a whole bunch of times. Strawberry Lemonade Sandwich Cookies

Ok, I am going to just come out and admit it. Half the reason I love these cookies is that they are so darned cute looking. Seriously, pastel shades of yellow and pink scream "spring is here!" to me. Even when the weather is screaming "sorry, spring has been cancelled this year! We're alternating between winter days and summer days until further notice." Oops. I'm so excited to share this recipe with you folks today! I recently developed these cookies for company called Baker's Choice. I've been a fan of theirs for a while, and I'd like to tell you a bit about them. For kosher bakers and those in the New York area, Baker's Choice is found to be a familiar name. But for those who haven't heard the name before, let me introduce you to their fabulous line of baking products. Good news friends! Y'know how it's been wintery all spring? Don't get me wrong. I totally don't like to be too hot. But when I'm bundling up and wearing my coat in April...that kinda sucks. Flourless Chocolate Almond Tuiles

**This recipe originally appeared in my monthly baking column in Ami's food magazine, Whisk.** So it's my third day in a row of passover baking, and I am already bored. Everything is so similar in texture when you don't use flour - or even matzah meal! I'm ready for something a little bit different, and I am sure y'all are too.
