While you can simply marinate and grill this London broil, I urge you to take the extra few minutes to boil down the marinade into a sauce! You won’t believe how flavorful this dish is, and the sauce is what really takes it over the top!
FYI: This will work nicely for other cuts of steak as well, such as oyster steak or strip steak (aka Denver steak).

London Broil in Brown Sugar Beer Sauce
Ingredients
- 1 (approx 2 lb) London broil
- Marinade:
- 1/2 cup brown sugar
- 1 cup beer
- 1 Tablespoon soy sauce
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
Instructions
1. Combine all ingredients in a large ziplock bag. Add meat and refrigerate for 1-2 hours, up to overnight, to marinate.
2. Once marinated, remove meat from marinade but keep the marinade.
3. Grill or broil the meat on high for 8-10 minutes per side, until cooked to desired doneness. For medium rare, the meat should be at about 135 degrees.
4. Place marinade in a small pot over high heat and cook until it starts bubbling.
5. Reduce heat to low and simmer for about 10 minutes, until marinade is thickened.
6. To serve, slice meat and drizzle sauce over it.
Notes
Plan ahead: This meat can be frozen, raw, in its marinade. Defrost and cook fresh.

You can – I usually do 130 for a few hours. You can do higher or lower, depending on your preference.
