Pecan Pie Hamantashen

February 17, 2014 by overtimecook 8 Comments

Pecan Pie Hamantashen are a perfectly delicious twist on the traditional favorite.  Don't hate me people, but we're kinda going into Purim mode here. I know. I know. I don't want to face it either. Mostly because Passover is a month after Purim, and I really don't want to face that. But what can you do? It's all around us! Seriously, the purim mania seems to start earlier and earlier every year! I've been busy lately creating some amazing recipes for my column in Ami magazine, but today, I am sharing one of my favorites from last year's column: Pecan Pie Hamantashen! If you're one of those people who appreciates tradition, but doesn't actually love hamantaschen, this recipe is for … [Read more...]

Grilled Chicken and Portobello Wraps with Garlic Mayo

February 12, 2014 by overtimecook 22 Comments

Grilled Chicken and Portobello Wraps with Garlic Mayo are a healthy supper that's easy to make and delicious to eat! So you might have guessed, based on the (in)frequency of posts lately that I've been crazy busy. Nothing new for me, you say? Well sadly, I've found myself the kind of busy where I am cooking less frequently than usual. And that means...eating or ordering out. Not the best option when you're dieting, but one of the more diet friendly options you can usually find is a grilled chicken wrap. Problem is, no matter how healthy they say it is, you just know there's gonna be hidden calories all over the place, right? Second problem, it's painful to pay a restaurant to … [Read more...]

Chocolate Crepes with Strawberry Filling

February 5, 2014 by overtimecook 5 Comments

Chocolate Crepes with strawberry filling, topped with ice cream, make a perfect special-occasion dessert! Wow. It's been a while since I last posted a recipe here, huh? Good thing it was a good one, amIright?  Well today's recipe is an awesome one too. It's one that I developed because I totally listen to your recipe requests. One request I had gotten all the time is "please post cookie recipes that are made with oil!" (As opposed to margarine or butter.) So I did. Another request I get all the time: to post recipes for a beautiful dessert, perfect for special occasions. Well, it don't get more beautiful, more perfect for special occasions than these delightful Chocolate Crepes. … [Read more...]

S’mores Pie

January 22, 2014 by overtimecook 42 Comments

Gooey Chocolate in a graham cracker crust topped with marshmallow frosting - S'mores Pie is the ultimate in easy desserts! A couple of weeks ago, I wanted to make a special treat for a special occasion. But I was tired. So I had this whole internal debate - should I make a fancy dessert, or should I skip the special occasion and go to sleep. Back and forth, back and forth. I was just too tired to do anything fancy. And before you ask, no, a simple dessert just wouldn't cut it. Then finally, I came up with the (obvious) solution. Make a dessert that looks fancy, but is actually pretty simple to make. Perfect, right? So I came up with this s'mores pie. Super easy, but I mean, … [Read more...]

Roasted Red Pepper Dip

January 20, 2014 by overtimecook 49 Comments

Roasted Red Pepper Dip is easy to make, is healthy and the perfect party dip! Raise your hand if you love dips. Shabbat challah and dips go together like...peanut butter and jelly? My personal favorite has always been hummus. I like the dips full of mayo too, like creamy basil dip or creamy eggplant dip. But then I went on my diet, and couldn't quite indulge in endless amounts of hummus or mayo based dips. (Who should, really? So calorie dense!) So I started making my mom's old classic - roasted red pepper dip! Here's the thing though. I grew up enjoying it, not as a healthy dip, but just as one that my siblings and I enjoyed. It wasn't until I was an adult on a diet that I realized … [Read more...]

Grape Upside Down Cake is beautiful and impressive, plus it's yummy and has a fabulous texture! I was all set to post a new real food recipe, but then I decided that this cake is too perfect for Tu B'shvat to resist posting today. Seriously folks, you need to make this for Tu B'shvat. But then, keep the recipe handy, because it's so delectable, so pretty, so great, you'll want to make it again, and again. And again. And then again. The great thing about upside down cakes is that a plain round cake looks beautiful. No frosting, no piping bags, no sugar roses. Just a gorgeous cake that will impress everyone you serve it to. Amazingly soft and chewy cookies are topped with a luscious creamy topping and fresh fruit - fruit tart cookies! I'm so excited to share this recipe with you! Coffee Crinkle Cookies

January 6, 2014 by overtimecook 80 Comments

These coffee crinkle cookies have no butter or margarine, but they do have an incredible texture and they're packed with flavor! Have we discussed recently just how much I adore coffee? Seriously, I like to say that it's coffee running through my veins - not blood. And while part of what I love about my beloved coffee is the caffeine, the buzz, the liquid energy, I also love the flavor. No, I really do. So much so, in fact, that I've even had decaf coffee a couple of times in my life. I know, crazy, right? But what can I say, coffee is just so awesome. So. Naturally, for a flavor this good, this beloved, I needed to come up with a rocking cookie...because, cookie. And boy did I … [Read more...]
