Air Fried French Fries and an Air Fryer Review and Giveaway

December 15, 2014 by overtimecook 455 Comments

Air Fryer Review - can fat free french fries taste as good as the real kind? ***Before we start – have you signed up for my email newsletters? You’ll get new recipes, cooking tips, menu suggestions, kitchen deals  – and more! Click here to signup.*** Scroll to the end of the post for a giveaway! I first heard about the concept of an air fryer a couple of months ago, and was kinda intrigued. But as Hanukkah approached, and frying is weighing (hehe, excuse the pun) on people's minds, loads and loads of my more health conscious readers have been asking what I thought of air fryers. Do they work? Is air-fried food as good as fat-fried food? Well I couldn't answer these questions without … [Read more...]

Roasted Butternut Squash Orzo Salad with pomegranate seeds and a tangy dressing is the perfect seasonal side dish! ***Have you signed up for email newsletters from Overtime Cook? Don't miss out - click here to sign up!*** I think I meant to write an introduction to this Roasted Butternut Squash Orzo Salad - all about how it is seasonal, easy to make, and a perfect side dish for Thanksgiving. But when I sit here trying to think of something to say, the only thing that comes to mind is how this salad is insanely satisfying and filling. Seriously. There's something about the salty, sweet and spicy flavors of this dish that come together to start a party in your mouth that makes this salad … [Read more...]

Quick and Easy Fried Rice

October 27, 2014 by overtimecook 7 Comments

Quick and Easy Fried Rice is a yummy side dish that takes just minutes to make!   Excuse me for a minute while I go all nostalgic on you here, but I grew up with this dish, so it's really exciting to share Daddy's Quick and Easy Fried Rice and Eggs with you all. My father made it all the time when I was growing up - and it's no wonder! If you have leftover rice (or you can make extra rice when making some for a different dish) you can transform it into a yummy side dish.  My father used to do it as a real spur-of-the-moment thing. "Oh look - leftover rice from supper? Let's make lunch for tomorrow!" With just a few minutes of prep and simple ingredients, this is bound to become your go-to … [Read more...]

Indulge yourself without too many calories or spending too much money with this Skinny Iced Vanilla Latte! Why, you might be wondering, am I posting a summery-looking, iced drink - NOW - just as the heaters are coming on, the sweatshirts are coming out of the closet, and the days are getting shorter and colder. Well, let me assure you, I have a very good reason. Well, maybe it's not very good, but I do have a reason. I love cold drinks. Summer, spring, winter, fall. It doesn't matter what the temperature is, I love my iced tea, my ice cold soda, and even my coffee is better over ice. Besides, I know that after a ton of holidays and way too much fattening food, many of you are probably … [Read more...]

Roasted Sesame Broccoli

October 6, 2014 by overtimecook 30 Comments

Roasted Sesame Broccoli is a quick, easy, and tasty side dish! The way I've always cooked for holidays like Sukkot is to prepare all of the freezer-friendly dishes well in advance, then last minute, I prepare some veggie sides, which don't freeze well. If you're looking for quick and easy veggie sides to add to your Sukkos menus, I've got just the thing for you: Roasted Sesame Broccoli. When I originally made this dish, I set out to make my Honey Glazed Garlic and Ginger Sugar Snaps. I know, it's quite a stretch to get from there to Roasted Sesame Broccoli, but let me tell you how that happened. My sister asked me to make a vegetable side dish for Rosh Hashanah (I was her guest). I … [Read more...]

Homemade Mango Lemonade

August 28, 2014 by overtimecook 12 Comments

Homemade Mango Lemonade is simple to make and is bursting with seasonal flavors.  I'm sorry folks, but I'm just not ready to accept that summer is nearing an end. It's hard to ignore the signs, but I'm trying my best. Pinterest is no longer filled with juicy berries and heirloom tomatoes. Family barbecues are getting less frequent, and the weather is getting cooler. But it's still august, and I'll post a summer recipe if I want to. The pumpkins can wait. So can the apples, the fall spices, the warm fall flavors. Today we can have a tall glass of homemade lemonade, served over ice. Hold on to summer, it's fleeting, but it's still here. This Homemade Mango Lemonade couldn't be simpler. … [Read more...]

Grilled Corn and Pastrami Salad

August 18, 2014 by overtimecook 21 Comments

Grilled Corn and Pastrami Salad has an amazing smoky flavor, bringing together all of the best things about summer food! I'm feeling deja vu here. I know, this recipe is brand new, but I really dreamed it up a while ago. In fact, this salad was the original inspiration for this grilled chicken and corn salad. The recipes both started to run together in my head, what with the whole grilled corn (yum!) thing going on, and it's kinda confusing. Especially because my head is pretty confusing as it is, with multiple cookie recipes being formulated at any given point too. But despite the similarities between the recipes, I decided to just go for it and share this one. Mostly because...um, it's … [Read more...]

Grilled Chicken and Corn Salad with Creamy Avocado Dressing

July 22, 2014 by overtimecook 9 Comments

Grilled Chicken and Corn Salad with Creamy Avocado Dressing is the healthy and delicious way to enjoy summer grilling and fresh produce! I've been planning this salad for over a year now. I know. It sounds crazy. Who spends a year planning a salad? Granted, I did do one or two other things during that year, but I kept thinking about this salad and planning it until it was making me very hungry all the time. (Fine. I'll admit that there may have been other things making me hungry, but still.) I guess I was waiting for a good time to make it - a special occasion worthy of trying out a salad this amazing. The chance presented itself when my sister invited me to her house for the holiday of … [Read more...]
