Grilled Steak and Portobello Salad with Maple Soy dressing is sweet and savory salad perfection!   Do you receive the Overtime Cook newsletter? It’s full of recipes, kitchen tips and more! Click here to sign up. I think there are two camps when it comes to steak salad. Some people are like...STEAK MAKES SALAD SO MUCH BETTER!! While others seem to feel that steak salad is really just a little game of "find the steak in the lettuce," ya know? Clearly, I'm in the first camp. Salad is good. Steak salad is GREAT! And this Grilled Steak and Portobello Salad with Maple Soy Dressing is certainly next-level. The theme of this salad is pretty much sweet and savory - in the best way … [Read more...]

Man it's hot outside. Remember those days a few months ago when it was so cold and we were just sitting around dreaming of summer? I dunno. I could use a little break from this heat, dontcha think? Well, there's bad news and good news. The bad news is, it's gonna keep being hot for a while, pretty sure there's no way around that. But don't worry, the good news is, you can still cool down from all this heat with a delicious, homemade milkshake. And let me tell you friends, there's more good news! Because … [Read more...]

Homemade Mango Lemonade

August 28, 2014 by overtimecook 12 Comments

Homemade Mango Lemonade is simple to make and is bursting with seasonal flavors.  I'm sorry folks, but I'm just not ready to accept that summer is nearing an end. It's hard to ignore the signs, but I'm trying my best. Pinterest is no longer filled with juicy berries and heirloom tomatoes. Family barbecues are getting less frequent, and the weather is getting cooler. But it's still august, and I'll post a summer recipe if I want to. The pumpkins can wait. So can the apples, the fall spices, the warm fall flavors. Today we can have a tall glass of homemade lemonade, served over ice. Hold on to summer, it's fleeting, but it's still here. This Homemade Mango Lemonade couldn't be simpler. … [Read more...]

September 13, 2012 by overtimecook 63 Comments

Giveaway Closed! A couple of weeks ago my friend Leah was super nice and stopped by my office with a salad she had picked up for me at a nearby restaurant . (Friends bring you ice cream. Real friends bring you salad. Everyone knows that.) The restaurant had called it a tropical salad. It has lettuce, apple and mango, and a delicious dressing. I immediately began thinking of how I would recreate it. Then the folks over at Pom Wonderful were kind enough to send me a couple of bottles of pomegranate juice, and I immediately knew I would be making the pomegranate version of this salad. Seriously, the pomegranate juice is kinda like magic when making a salad … [Read more...]

Black Bean, Corn and Mango Quinoa Salad

July 1, 2012 by overtimecook 8 Comments

Have you ever known that you had to do something, but you kept putting it off because you assumed it would be unpleasant? Then you finally bite the bullet and the task you were dreading turns out to be no big deal at all, or even, at best, a positive experience? For example, last week at work, a purchase order landed on my desk. I was super busy at the time. I glanced at it briefly and recognized it as coming from a rather problematic account of mine. I decided to get other stuff done meanwhile, and deal with the problem order when I had a few minutes. It sat on my desk over the weekend, and finally I got to it. I completed the order and sent a confirmation of it to my contact there, Ryan. … [Read more...]
