Oatmeal Peanut Butter M&M Cookies

July 22, 2013 by overtimecook 7 Comments

These dense and crunchy Oatmeal Peanut Butter M&M Cookies are a party in your mouth! Read on... I can't even tell you how many times I intended to post this recipe. I made it a whole bunch of times. And each time these adorable looking cookies got rave reviews. But somehow I never managed to write down the recipe. And worse, never got to photograph these cookies. And so for months, these cookies went un-posted. And that's a shame, because they're really delicious. So I sacrificed for all of you. I baked up yet another batch of these cookies. On a fast day, of all days. Big mistake. These smell amazing when they bake, and my entire family was quite unhappy with me, forced to smell … [Read more...]

Crispy Baked Onion Rings

July 14, 2013 by overtimecook 22 Comments

Crispy Baked Onion Rings are healthier than they look. Intrigued? Read on! Remember how last week I was craving onion rings? You might have read about it on facebook, and then later on when I mentioned it in my post. Well those who know me will not be surprised to learn that once I get an idea in my head, it doesn't leave very easily. And so onion rings were right on the top of my mind for a couple of days now. And finally I made them. But let me backtrack for a minute. I recently photographed baked onion rings for a photography job I did. (You didn't know that I do freelance photography? Now you do!) And really, that's when the cravings started. Those were baked, but still, not so … [Read more...]

S’mores Truffles

July 10, 2013 by overtimecook 37 Comments

S'mores Truffles are a no-bake way to enjoy a classic treat! So tonight's post was going to be onion rings. Those of you who follow me on Facebook know that I was seriously craving them this afternoon. Admittedly, I frequently crave onion rings. French fries are good, but onion rings? Totally blissful. But then I made a very mature decision. Instead of making onion rings, I went to the gym. I know, I know, I hardly recognize myself. Exercise over onion rings. I feel so virtuous about this I practically desserve ice cream. Moving along though. Obviously I don't have onion rings to share with you tonight. Don't worry, I didn't give up on them. I will be making onion rings eventually. But … [Read more...]

9 Meatless Meal Ideas

July 4, 2013 by overtimecook 7 Comments

If you're an observant Jew, you are probably very well aware that "the 9 days" are coming. For those who aren't familiar, the 9 days of mourning are a period of time in the summer when Jews mourn the destruction of the temple in various ways - one of which is not eating meat. I personally have a really difficult time of it, as chicken is my supper pretty much every night. I don't touch fish, and diets and pasta don't go well together. So I figured I would gather together a few of the recipes I will be making for the 9 days. If I need them, I am sure some of you do as well! So whether you are a Jew looking for "9 days" ideas, or you're simply looking to cut down on your meat consumption, … [Read more...]

Blueberry Muffin Cookies

July 3, 2013 by overtimecook 27 Comments

If you've been reading my blog and/or magazine column for a while, you might have noticed that I like to do things a little differently. Here's an example. People love blueberry muffins. I have to say, I do too. And people even like a healthy version of blueberry muffins. I have to say, I find them to be a fabulous treat for my dieting self. But sometimes, I like to turn things on their heads. Make a completely different version of a classic. (Remember my S'mores Surprise Cookies, Rice Krispy Treat Bark, and other fun treats?) These cookies are a good example of this. Sure, I would have just made blueberry muffins, but where's the fun in that? So instead, I created blueberry muffin cookies. … [Read more...]

Broccoli and Quinoa Salad with Asian Vinaigrette

June 23, 2013 by overtimecook 24 Comments

So I know that we've discussed the crazy sources of my recipes a few times before, but we should probably discuss it again today. The idea for this recipe struck late one night. And by late, I don't mean my usual 1-am-still-baking-cookies late. I mean almost asleep kind of late. And for those of you who know me...that's late! So I opened up one eye, opened up the notes app on my iphone, and typed "quinoa + broccoli salad." And it's been in the back of my brain ever since. At first, I was going to go with a traditional broccoli salad type dressing, but with added quinoa. Then I decided to take the flavors in a different direction. I settled on an asian-inspired dressing, and I am … [Read more...]

Cherry Lime Bundt Cake

June 19, 2013 by overtimecook 19 Comments

One of the tough things about writing a recipe column for a magazine is doing things way in advance. I originally made this cake recipe in March...way before cherries graced the shelves of the supermarkets in my area. So I came up with a solution, and bought a package of cherries from the freezer aisle. Well, that's a good solution for making this fabulous cake year round, but now that it's summer and delicious fresh cherries are abundantly available, there's only one way to make these properly, and it involves fresh cherries, and a handy cherry pitter sent to me by my friends over at OXO! This is one of my favorite new bundt cake recipes - fresh, bright, light, and simply delicious. Try … [Read more...]

I love sharing funny little anecdotes with all of you, but I am usually uncomfortable sharing more personal information here. But today I am crossing that barrier to post about something I am very proud of. It started a while ago when I promised myself that I would buy myself the new (and insanely gorgeous) MacBook that I had my eye on for ages when I lost 15 pounds. And since then, I have been dieting hard, more motivated than ever to shed a couple … [Read more...]

Secret Ingredient Chocolate Cupcakes with Chocolate Sour Cream Frosting

June 11, 2013 by overtimecook 37 Comments

A hundred years is a long time. I mean, I wouldn't really know. I haven't been alive long enough. Neither has my father. Or my grandfather. But Hellmann's is about to celebrate 100 years of business, and when they asked me to help them celebrate, I couldn't say no. Firstly, like I said, 100 years is super cool. Also, I use one brand of mayonnaise and one brand only. Obviously, that's Hellmann's. And lastly, they are partnering up with Mario Batali, who I am a teensy bit obsessed with, (like, if one chef would cook me a kosher meal, I would probably pick him) to celebrate this milestone. In honor of their big 100, Mario Batali recreated a number of Hellmann's classic recipes. They asked me … [Read more...]

Citrus Shallot Salad Dressing

June 4, 2013 by overtimecook 32 Comments

When it comes to eating food repetitively, I think there are two types of people. Those who are totally fine with it, and those who can't face the same food too often. My parents fall into the first category. They both have a habit of finding a food, cuisine, style of cooking, spice, or some other food they enjoy. Then they cook it. And cook it. And cook it again. And so many more times that people like me want to scream at the sight of the repetition. Personally, I need to vary my food. (I can't imagine you're shocked right now.) And while I definitely have old standby foods that I'll fall back on, I'll almost never eat the same food day after day after day. And when I do, you know that … [Read more...]
