Is there a time of the year, more than these post-pesach days, when people are more focused on eating healthy and paying more attention to their diets? No, I don’t think so either.
Aside from any over-indulgences we may have enjoyed over the holiday, I think there’s also a “fresh start” aspect. Before passover, we clean all the food out of our kitchens. Over the holiday, we buy our pesach food. Then when pesach is over and real life starts again, we need to restock. And now, the choice is ours. Do we stuff our pantries with crackers and cookies and all kinds of junk? Or do we load our shelves up with fruits, veggies and whole grains?

Before we get started, I want to share a disclaimer. Over the years (over 6 1/2!) of sharing recipes online, I learned that there is no single definition of “healthy food” that will please everyone. For some people, it’s low-carb. Others want paleo. There are folks who only want gluten-free recipes, and some who want low fat. Some just want fewer processed ingredients. Some want a focus on calories and nothing else.
Well obviously, there’s one recipe for all of you: open a bottle of water. Take a big gulp. Congrats! That’s pretty healthy.
