Waffles are one of my top 3 foods (along with dumplings and popcorn) and if you've only been enjoying waffles in a sweet format, you're missing on some of the best food you could be eating. Chicken and waffles is a famous southern dish, but my version swaps the fried chicken for maple pulled chicken (lighter and easier to prepare), swaps the big sweet waffles for mini cornbread waffles (prettier presentation!) and tops it with just the right toppings for tanginess and crunch!    If you're looking for a dish that will impress … [Read more...]

Maple Mustard Roasted Chicken

February 26, 2014 by overtimecook 38 Comments

Maple Mustard Roasted Chicken is an easy and flavorful dish! In case any of you doubted how much I totally love my readers, this recipe should put the doubts to rest. I totally made this chicken for y'all. You people asked me for an easy chicken dish, and this one delivers. It's so flavorful, so moist, so good...you can't even imagine. But the best part? This chicken requires 5 minutes of prep time. Maybe less. No jokes. This is actually an accidental reincarnation of an old family favorite chicken dish. I made this amazing sauce, and sliced up some onions, then a lightbulb went off in my head, and I decided to cook it the same way as my saucy onion chicken. The result was chicken with … [Read more...]

Maple Pumpkin Granola

November 7, 2013 by overtimecook 8 Comments

There are certain foods which I seem to forget about for a while, then I remember them suddenly. And as I eat said food, I kick myself as I wonder why I don't make it more often. Like, every day, for example. My Spicy Baked Zucchini Sticks are a perfect example of this. They are among the most popular recipes on this blog, and for very good reason. And I often forget that I've got such a delicious and easy recipe in my repertoire. Then I make them, and I get all confused as to why I haven't been making them daily since the day I came up with the recipe. Well, it turns out that homemade granola is another such example. I've made homemade granola plenty of times in the past, and totally … [Read more...]

Maple Sour Cream Bundt Cake with Vanilla Bean Bourbon Glaze

May 9, 2013 by overtimecook 28 Comments

This post is going to be very short, but it's totally worth it because I have a fabulous new bundt cake recipe to share with you today! My awesome friend BL came to my house for Shabbat recently, and in her honor, I knew I had to come up with a delicious cake to serve. One of her favorite dessert flavors is maple, so my mind naturally went there. Add in some sour cream (or tofutti sour cream, if you are so inclined) for richness, and you are left with one of the most delicious bundt cakes I've come up with in a while! If you are looking for a delicious, simple, and very pretty cake, try this. It's dense and pound cake-like, but with a wonderfully different flavor. You'll totally love … [Read more...]
