Apple and Date Pargiyot

Do you receive the Overtime Cook email newsletter? I send out a weekly menu plan, plus more. Click here to sign up. P.S – it’s completely free! This is my favorite type of chicken dish to serve at holiday meal. It's a sauce chicken, which means I make it ahead of time and freeze it (yes! you read that right!), plus the sauce stands up to reheating on the hotplate. It's sweet, but not too sweet, it's soft and tender and just everything I look for in a chicken recipe! Feel free to sprinkle pomegranate seeds over the chicken for an extra symbolic element of this dish, but with apples, dates and carrots, you really can't go wrong here! Did you know that I share cooking demos, menu plans, … [Read more...]

Loaded Steak Salad

May 11, 2025 by overtimecook Leave a Comment

This loaded steak salad is beautiful to present and tasty to eat. Do you receive the Overtime Cook email newsletter? I send out a weekly menu plan, plus more. Click here to sign up. P.S – it’s completely free!   If you've been a guest in my home, you already know that I love to put together a great salad. In my opinion, the secret that sets a good salad apart from a great one is a TON of textural elements. One crunchy thing is good, but multiple crunches is better. You need chewy, soft, crispy....you get the idea! While I generally like a tossed salad, an arranged platter like this is great for a crowd. It looks beautiful, but it also allows everyone to choose which components … [Read more...]

Do you receive the Overtime Cook email newsletter? I send out a weekly menu plan, plus more. Click here to sign up. P.S – it’s completely free! Welcome to episode 2 of my new series, Dinner Roulette: You Vote, I Cook! This week, my instagram followers chose: Beef Stew Meat Mushrooms Sweet Potatoes  Cooked in the oven This was a fun challenge! I was going to dice up the sweet potatoes and cook them in the same dish as the meat and mushrooms, but then I thought it would be more satisfying if the sweet potatoes were a separate vehicle for the meat. I also wanted to cook it all at the same time, so I slow roasted the sweet potatoes, then smashed them, then roasted them … [Read more...]

If you don't follow me on Instagram, you're missing half of this story. Last night, feeling uninspired, I let my followers vote on my dinner ingredients. Using polls, they chose: Chicken cutlets, broccoli and rice. The obvious choice was to go in an asian direction with it, but I challenged myself to go in a less obvious direction and make something delicious to share with you.  I'm pleased to say, this dinner was an absolute winner. It took about 20 minutes to prepare, and tasted fantastic. I hope you try it, and join @overtimecook on … [Read more...]

I'm not trying to be a snob or anything, but the magic of this recipe isn't just those flavor bomb mushrooms that cook alongside the brisket, which will make you wonder how it's possible for a simple mushroom to be so intensely rich and decadent.  The real secret of this brisket is the mushroom flavor that seeps into the meat! We all know that mushrooms give off lots of liquid when they cook, right? Well, what if I told you that the mushroom liquid gets absorbed by the meat, making it … [Read more...]

If you're looking for a new roast recipe that's simple, doesn't have any wine, and is absolutely bursting with flavor, this is the one for you. The roast is soft and juicy, get's its sweetness just from dates, with no added sweeteners, and is so simple to make.  Here's a cool kitchen hack? You know how it can be pretty hard to cut dates, because of how sticky they are? Spray your knife with non-stick cooking spray before cutting, and you'll have no problems cutting the dates! The quality of the meat you use makes a huge difference, which … [Read more...]
